When you’re reading a recipe it’s not unusual to come across the simple instruction “salt to taste”. Very few of us, however, actually know what this means. Adding salt to your dishes doesn’t require you to add until it has a salty flavor, but simply to add salt until the bitter flavors subside and the richness of the other flavors shine through. Adding salt to your food can reduce the bitterness of those foods that taste so naturally and bring out the sweetness of your other ingredients. The next time you have a dish that needs a little something, try adding a generous three finger pinch of salt, taste, and continue to add as you feel is needed, remembering that you don’t want your dish to actually taste of salt.
