I love a good Guacamole. I would have it every day if I could. I don’t often have this problem, but when I want to save some until the next day, I open up my fridge, pull out my left overs and the top layer of the guacamole is brown. If it wasn’t so delicious I would throw it out because frankly it looks super gross. TheKitchn has a quick tip that helps keep guacamole green and fresh for up to three days! It’s so simple too. Just pack the guacamole in an air tight container, pushing out any air bubbles and then smooth the top of the dip. Put a small layer of water on the top, about 1/2 inch. Due to the density of the dip it won’t mix and the water is a perfect way to keep oxygen away. It also won’t mess with your lime juice content (some people add extra lime to keep guacamole from turning). When you’re ready to eat, just take out the container and pour the water out, mix and enjoy. I’ve often found that guacamole will taste richer the next day anyway because it gives all the ingredients time to soak together.
This is good news when you’re trying to prepare for entertaining! You don’t have to make it five minutes before serving to keep it from turning colors!
